In my family, there’s nothing I appreciate more than brioche dough to accompany a glass of milk, either at breakfast or snack. This is the first time I encourage you to make a chocolate roulade or Choco King, but I assure you it will not be the last if it is already delicious chocolate without him is a scandal.
If you want to leave your guests with their mouths open and do not mind waiting time for this slight roscoe enough, I assure you that with this recipe you are going to succeed. The original recipe I found in the official journal of Thermomix, was decorated with wreaths, but I replaced it with the stars so maybe I should have named my roscoe as Choco Star right?
Ingredients for a molded rack 24 cm
- 500 g of bread flour and a little more to work the dough,
- 40 g of pure cocoa powder,
- 1 pinches of salt,
- 1/2 teaspoon ground cinnamon,
- 130 g of milk and a little paint,
- 25 g fresh compressed yeast,
- M 4 eggs,
- 100 g sugar,
- 60 g of coffee liquor,
- 40 g of melted butter and
- 1 dash of vanilla.
How does Choco King
To do it with Thermomix put in the glass flour, pure cocoa, salt and cinnamon and mix 15 sec / vel 5. Withdraw to a bowl and reserve. We put in the glass milk and yeast and schedule 1 min / 37 / vel 2. Add the eggs, sugar, liquor, butter, and vanilla. Mix 30 sec / vel 2. Incorporate the mixture from the bowl and mix 30 sec / vel 6. Knead 3 min / closed / Tumbler mixing function (speed spike). Let stand inside the vessel until doubled in size (about 1 hour).
To do it without Thermomix, mix (unbeaten) eggs with sugar, butter, liquor and milk which will have dissolved yeast. Add the flour previously well mixed with the cocoa, cinnamon and salt. Knead until the smooth and elastic dough, about 25-30 minutes. Put the dough in an oiled bowl, cover with plastic wrap and let stand until doubled in size (about 1 hour).
In both cases, put the dough on a work surface dusted with flour and knead to remove air. Cut the dough into 8 portions and give them a ball. We put balls, spaced apart, into a mold of 22 cm buttered. In the center, we put a ring emulate also buttered, so as not to deform when cooking.
Paint the roulade with milk chocolate milk and let it sit again until doubled in volume (about 1 hour, maybe more depending on the environment where we place). Meanwhile, preheat the oven to 180° C and bake the roulade for 20 or 25 minutes. Remove from oven, let temper, unmold onto a rack and garnish to taste.

This recipe Choco King or chocolate roulade is ideal to accompany a glass of milk or hot chocolate. But if you want more curl, open them in half lengthwise and fill it with whipped cream and truffle, but if not then you zip up the pants I do not want to know.
